    The government does not set the prime rate. Prime rate is a tool for a bank to simplify adjusting the interest on their products, from mortgages to credit lines. Each bank set its own prime rate, and, technically, it can be set to any number, as long as it moves in lockstep with BofC overnight rate. In practice, however, all banks set their prime rates to BofC rate 2%. Do not ask me where these 2% came from, but they allow banks to offer loans at less then prime and still earn money on the difference with BofC overnight rate.

    Sub prime mortgages refer to mortgages arranged for clients with below average credit. The rates can be slightly higher than the main banks but the term is usually 1 or 2 years so you can get your credit situation cleared up and then apply for a regular mortgage. If you need a mortgage and cannot wait till your credit is repaired then it is not such a bad idea.

    Q. How do they make slow roasted prime rib roast (beef) rare?

    I don't understand how (at the keg) they make their slow roasted prime rib roast still pink? i love rare meat. the other night i thought i'd try to make a slow roasted roast but it was far from pink in the middle. i've looked for recipes/cooking instructions on the i-net but couldn't find any. does anyone have some good ideas?

    "Cook until your beef is about 5-10..."



    Seaon with seasoned or regular salt, worcestershire sauce and pepper. Place in an oven at 250-275, cook until your beef is about 5-10 degrees lower than what you want it to end up. Get one of those digital thermometers you can set the temp on and leave in the meat. This way you can walk away. Take out of the oven and let the beef rest, this will allow for the extra 5-10 degrees of cooking. Then slice. The time will var depending on how big the roast is. Most intrction say to cook at 350 and you can but a low slower temp is best. Add about 1 extra hour. Thank you for eating rare beef. I hate it when people make pot roast, or over cook thier beef.
